Gastronomy of Castilla la Mancha

The cuisine of Castilla-la-Mancha commonly known as ‘Manchega’ is sober, abundant and tasty, and its origins can be traced to the shepherds. The cuisine is based in produce of the land, region's long tradition of hunting and cattle-breeding, a typical Toledo dish is stewed partridge, quail or venison. Those with a sweet tooth have the Toledo’s famous marzipan shaped into balls, ovals, or little figurines.

The restaurant lies within the confines of an old 12th century mansion lying in the heart of Toledo's historic quarter. Eleventh century bodega that is carved into the earth containing over 40,000 bottles. The wine list has over 1,900 different wines. The cuisine is crafted using many products from the restaurant owner's own garden.
We recommend:
Meat: Red partridge "Dos Vions", with two textures.
Fish: Wild sea bass, roast baby vegetables and aromatic herbs.
